I worked at Souen as a dishwasher and prep cook in the 80′s. The skills I learned there wilI always be a substantial part of who I am. I wonder if my dear friend Tama is still at Souen? If possible please send her my email address and send her my kind greetings. When I left NYC Yama had just acquired the Union Square location but it was a long way from being opened. I would love to dine there sometime. Hopefully it won’t be too long.
